Happy Friday friends! Are you looking for something super easy for your weekend? My slow-cooker always saves the day when I am in need of something flavorful and I don’t want to put in a lot of effort. I know that sounds terrible. We that cook should always want to spend hours in the kitchen making each ingredient sing like it’s the star. No, people. This is not the truth. Even if we love food and love cooking, sometimes we have other things to do. Sometimes those things may be binge watching a TV show with our husbands but trust me there are important things to do!
In walks this fabulous slow-cooker recipe. My husband and I went to an event a couple of years ago and they served Chicken Adobo. I didn’t know what it was, I had never had it before and I quickly discovered it was tasty! I found this recipe a couple of years ago and well it sat. It was saved on my Pillsbury page and that is where it stayed. Until, the other day. I thought this sounds soooo yummy! So I made it.
You do brown the chicken first, but please know you are not cooking the chicken you are simply getting a good crust on the skin. Now you will also notice that I used skinless thighs. Well the browning still had a nice effect and, while I try to stay true to a recipe at the least the first time I try it. I also like to stay true to my wallet and use what I have on hand.
I made Mexican rice packets from Knorr to go with the chicken and it was soooo good. We did pick the peppercorns off of our plates because I forgot to strain it, a slight kitchen fail on my part. I took the roasted garlic and spread it on my some buttered toast for an amazing garlic bread to go with our fantastic dinner.
Overall, this was a 🍗🍗🍗🍗🍗out of 5 recipe. We will definitely be making it again. the flavor is very different from anything I have made before. Traditionally, it is served with white rice but I really enjoyed the flavor of the Mexican rice with it. I am so glad that I finally tried this recipe. I hope you don’t want as long as I did.

Happy Friday! TGIF to say the least! I was ready for the weekend this morning and I am sure that you are too. I was originally going to post a different recipe today but when I made this mac and cheese it was just too good to wait to post.

Now on to the recipe! So this recipe is very straightforward. You could easily make this recipe gluten free by replacing the macaroni and panko with gluten friendly versions. For this particular use, I did not. I wanted to try the recipe exactly as it was listed.

The one thing that took the longest time was boiling the noodles and of course, cooking the bacon. I did it in my cast iron and had to do in batches so it took a little while to cook the whole package. I will say though, I never regret making all the bacon because my house smells good for days afterwards.

This is definitely a recipe to be made again and again. The hubs loved it. He has taken to calling it Crackeroni and Cheese or Crack and Cheese for short. I think he might be addicted. I took it to work and shared with a few folks there and they loved it.
My opinion is that the tomato was a fun bright touch. The bacon added a slight crunch along with the panko, that made this one of those mac and cheese recipes you can’t wait to try again. This recipe is a crowd size recipe so I would definitely make sure you have a lot of folks around to eat it or you might burn out on it before you have finished the dish.

If you are on Pinterest you have seen cloud bread. You have been curious about cloud bread. If you haven’t well let me tell you about cloud bread. Haha! I found this link Cloud Bread and decided that I should try it for something a little different than my normal 3 hour bread baking weekend ritual. It seemed like an easy enough task.
I had all the ingredients ready to go!
The one thing I didn’t do was pull out the hand mixer and well my results will tell you that I shouldn’t have been lazy!
I think I did those egg whites some justice with my elbow grease though. Haha! Stuck them in the oven and well magic happened.
They actually looked the way I thought they kind of should. They aren’t quite as fluffy as I was hoping hence I needed the hand mixer.
But upon escape from the oven and a proper cooling phase I was very happy with the taste and thus I will definitely be trying this recipe again! I wish I could describe it properly it tastes like bread just a super light version. Nothing heavy about it at all. These didn’t last long in my house at all.

We are a pork household. We love pork and all enjoy cooking it as well. Our smoker has seen better days so I had to try my hand at fixing a pork butt in the oven.
That is how it turned out. A 7 pound butt cooked for 5 hours at 200 degrees covered in tin foil and then for 2 hours at 350 with the foil removed. I covered it with some homemade rub. The seasoning was excellent. We honestly missed a little bit of the smoky flavor that we get when we do a traditional butt in our smoker but overall excellent flavor and this just proves that you can cook a piece of meat as long as you have some heat and the time.
My husband then made these amazing pulled pork sandwiches.
Layer pork, BBQ sauce, a fried egg and some pimento cheese. Trust me the flavor is out of this world!
So in a post last week I talked about a frozen gluten free pizza that was very tasty. This week I’m telling you my review of a mainstream gluten free pie.
We have pizza at our house almost every Friday night. It’s one night when we have a family meal and it’s just so special to me. Well this particular week (last week) we chose to order from Pizza Hut because they have a gluten free option.
Yep that’s right they use an Udi’s crust and well the toppings are still very much Pizza Hut. I ordered the meat lovers because meat!
So as you can tell from the picture the Crust is very thin and thus very crunchy. Not my favorite kind of Crust. If you are into thin crust already this pie is for you! If you like a hand tossed or even a NY style pie I’m afraid your enjoyment of this pie will be about like mine – seriously lacking.
So I guess the verdict is if you really want a gluten free pie and you are already ordering from Pizza Hut go for it. You will get the same sauce and toppings that you have always known and loved from The Hut! But if you are not a fan of thin or crunchy Crust I would suggest skipping this pie.
I know most of my reviews are very positive but I have quite a few gluten free friends following my blog so I really want to be honest above anything and tell you about my real experience and unfortunately sometimes that experience isn’t good.

So when making choices and decisions about my health I have found that if I plan ahead I definitely do better. And I mean planning each meal. And because of that it is often easiest to prep my food in advance as well! Here’s what I prepped this week!
Eggs – 20 eggs scrambled
This is enough for me and my honey to each have 2 eggs every morning during the work week.
Bacon – it’s nice to have with breakfast as well as in a salad. I also made some and added it to some black beans for a nice addition to a chicken salad.
In the same pan I made the bacon I made chicken.
Using this same pan means that I didn’t have to add any extra oil when cooking the chicken. This chicken can be used for salads for lunch and for dinner. It’s going to be great.
So when I want to be eating this:
I’m having chicken breast instead.
So for me this is the best way to stay on track. What do you do?
So sometimes I just crave veggies. I like to have more in my diet but I don’t always just want a plain steamed or boiled veggie. So my sweet boys aren’t always fond of veggies like me and they do consider French fries as a vegetable choice on a menu. We made a pork butt this past week. And we needed some sides if you will!

The result was very tasty. I wouldn’t consider it a true trick taste. I would say a reasonable substitute but not something that is going to fool anyone. The boys liked it but I think they would like my regular potato salad better. And the ice bath thing for easy shelling of the hard boiled eggs did not work.
Overall this was a great recipe and I definitely would recommend that you try it.
