Try It Tuesday Pork Edition 

We are a pork household. We love pork and all enjoy cooking it as well. Our smoker has seen better days so I had to try my hand at fixing a pork butt in the oven. 

That is how it turned out. A 7 pound butt cooked for 5 hours at 200 degrees covered in tin foil and then for 2 hours at 350 with the foil removed. I covered it with some homemade rub. The seasoning was excellent. We honestly missed a little bit of the smoky flavor that we get when we do a traditional butt in our smoker but overall excellent flavor and this just proves that you can cook a piece of meat as long as you have some heat and the time. 

My husband then made these amazing pulled pork sandwiches. 

Layer pork, BBQ sauce, a fried egg and some pimento cheese. Trust me the flavor is out of this world! 




Try-it Tuesday – Gluten Free Pizza 2

So in a post last week I talked about a frozen gluten free pizza that was very tasty. This week I’m telling you my review of a mainstream gluten free pie. 

We have pizza at our house almost every Friday night. It’s one night when we have a family meal and it’s just so special to me. Well this particular week (last week) we chose to order from Pizza Hut because they have a gluten free option. 

Yep that’s right they use an Udi’s crust and well the toppings are still very much Pizza Hut. I ordered the meat lovers because meat! 

So as you can tell from the picture the Crust is very thin and thus very crunchy. Not my favorite kind of Crust. If you are into thin crust already this pie is for you! If you like a hand tossed or even a NY style pie I’m afraid your enjoyment of this pie will be about like mine – seriously lacking. 

So I guess the verdict is if you really want a gluten free pie and you are already ordering from Pizza Hut go for it. You will get the same sauce and toppings that you have always known and loved from The Hut! But if you are not a fan of thin or crunchy Crust I would suggest skipping this pie. 

I know most of my reviews are very positive but I have quite a few gluten free friends following my blog so I really want to be honest above anything and tell you about my real experience and unfortunately sometimes that experience isn’t good.

Pork multi ways

When we smoke pork it is an event. There is a large amount of pork butt that is created. Here is a sample. 

So when you have this much pork there are only so many plates of bbq or pulled pork sandwiches that you can eat. And thus you have to become creative! 

First up is this little concoction. 

Potatoes, pork, chili, cheese and sour cream. We shall call you Bbq kitchen sink. Very yummy indeed and the smoked pork made for a nice change from what could have just been bacon for a loaded potato. 

Boil potatoes (chunked) 

Top with chili 

Top that with pulled pork 

Top that with cheese 

Top that with sour cream 


This is bbq frito pie 

Make a layer of Fritos 

Top with bbq pulled pork 

Top with cheese 

Heat until cheese is melted 

Take 2 tablespoons of sour cream and one tablespoon of bbq sauce. Mix together and put on top of dish. So good! 

Next: Siracha Style 

My son makes ramen noodles with fried eggs. It tastes very similar to fried rice. He decided to add some pork and top that with Siracha sauce. He loved it. I did not get to try this dish but it’s Asian flair inspired this: 

Spicy Peanut Pork and Noodles 

This was my take on a spicy pork dish. I started with some cabbage. 1/2 a head to be exact. 

Into the giant skillet it goes with 3-4 tablespoons of butter and 3 tablespoons of water. Cook it down over medium heat. 

It tastes so buttery and good I could have stopped here. But keep going. It’s time to start the peanut sauce. Get a sauce pan and add crunchy peanut butter I think it was about 3/4 of a cup. 

 Next you need some Worcestershire  just a splash 

Next up balsamic vinegar. Again just a splash. Maybe 1 tablespoon. 

Now for some sweet, a tablespoon of honey 

And now it’s looking good getting warmed up and mixed together now for the heat. 

A sprinkle of red pepper flakes adds that backend heat that is just right for this dish. 

Let the sauce cook on low heat while you stir. Now it’s time to add some pork to the cabbage 

The pork is already cooked so it’s warming through and finishing the cabbage. 

The sauce turns a beautiful caramel color. We want to add it to the pork and cabbage mixture. 

And for the finishing touch rice or noodles of your choice. We had gluten free spaghetti on hand so I went with those. 

It was a great treat. My guys both loved it. It will be my lunch today as well. This is just one post about how we make leftovers last and be more interesting. Do you have any special tricks for leftovers?

Gluten Gluten, where’s the cereal?¬†

The idea of going gluten free is a little scary. And it’s a little exciting. I love experimenting with food and this is definitely allowing me to get ready to try new recipes and really try out spices and technique that I couldn’t in the past. 

I have a future mother in law that is absolutely amazing and she got me some gluten free goodies to try. Here is a pic of just some of it. 

I have tried the oatmeal and it is great. If I hadn’t been told it was gluten free I would have never known. 

Also the maple crunch cereal was really good. 

Fruit and nuts are on my diet daily now and who knew my favorite cereal yes my actual favorite cereal is gluten free! Lol! It’s funny I don’t eat a lot of cereal but man when you think you can’t have it anymore it’s all you want! Oh and those chips totally gluten free! Snacks are now a craving. Oh being told you can’t is like a trigger being pulled so it’s all you want. 

I had a friend bring some fresh garden veggies to share and I was so excited to cook some up for dinner tonight! I put them in a skillet with a little butter (yes I use real butter) and then put some garlic pepper on them. So yummy!   

So here is the finished gluten free dinner my guys enjoyed with me! Italian beef over potatoes, garden fresh tomato and that squash oh my goodness!!!!! 

Yes reading every label and thinking every minute about what goes in my mouth is frustrating. I have no misconceptions about how hard this will be but it’s definitely something that can be done and doesn’t have to be miserable for me or my guys! 


Yes even I can actually follow a recipe!

ID-100282398One of my favorite things about cooking is changing recipes. I love to taste something and think of how I can make it better or change it. I make happy noises when I eat good food, and I have perfected a full face that my boyfriend and my family find amusing. But yes food and cooking are by far on my list of great loves. It is very rare for me to actually try a recipe without changing it, but in the spirit of this blog and sharing a journey, I also thought a recipe review of a recipe I found at might be welcomed.

I love chicken salad. If it’s made right. I love their to be chunks of chicken. I don’t like it too creamy. I love for it to have a subtle burst of sweet and some crunch. So when I saw the Tex Mex Chicken Salad recipe on the website, I knew that I had to try it.

1 1/4 pound of cooked chicken (I used chicken breasts)

1/2 cup mayo

1/4 cup sour cream

1/2 tsp. cumin

1/4 tsp. chili powder

1 small red pepper

1 small green pepper

15 1/4 oz. canned yellow corn drained

1 cup canned black beans drained and rinsed

In a medium bowl combine mayo, sour cream, cumin, and chili powder. Next stir in chicken, peppers, and corn. Mix Well. Fold in beans.

Cover and chill at least 2 hours.

Serves 6 with 1 cup per serving.

Weight Watchers Points Plus – 6 Points

We chose to have ours with wheat buns and made it a sandwich. This ended up making more like 12 servings because you couldn’t fit an entire cup on one bun. It was so good and so worth it. The corn adds the perfect burst of sweetness and the spice was actually just right for me. The beans were good, I could have left them out and been ok with it, but I know they added some good nutrients and I need and they made it to be a really filling dish. The peppers added that little bit of crunch I really desire in my chicken salad. This is definitely another way to liven up that boring old chicken! Chicken is such a versatile staple and if you are being health conscious and not a vegetarian, you are more than likely eating a lot of chicken, if you aren’t please tell me your secret.¬† But I do hope you try this recipe and enjoy it as much as we did! It has definitely made it onto the regular rotation of meals to prepare. My teenager who doesn’t like chicken salad said he really liked it. That’s always a win in my book!

PS the plate with two sandwiches was for the teenage boy, not for me! I promise!
