Happy Friday! TGIF to say the least! I was ready for the weekend this morning and I am sure that you are too. I was originally going to post a different recipe today but when I made this mac and cheese it was just too good to wait to post.

Now on to the recipe! So this recipe is very straightforward. You could easily make this recipe gluten free by replacing the macaroni and panko with gluten friendly versions. For this particular use, I did not. I wanted to try the recipe exactly as it was listed.

The one thing that took the longest time was boiling the noodles and of course, cooking the bacon. I did it in my cast iron and had to do in batches so it took a little while to cook the whole package. I will say though, I never regret making all the bacon because my house smells good for days afterwards.

This is definitely a recipe to be made again and again. The hubs loved it. He has taken to calling it Crackeroni and Cheese or Crack and Cheese for short. I think he might be addicted. I took it to work and shared with a few folks there and they loved it.
My opinion is that the tomato was a fun bright touch. The bacon added a slight crunch along with the panko, that made this one of those mac and cheese recipes you can’t wait to try again. This recipe is a crowd size recipe so I would definitely make sure you have a lot of folks around to eat it or you might burn out on it before you have finished the dish.

So in Nashville one of the perks of working downtown is Food Trucks! And when I can get out of the office for some lunch I love to hit up restaurants and food trucks that are different. A couple weeks ago I hit up this truck!

50/50 burger. It’s beef and bacon and just really right in all the ways that bacon can be!
Not being able to eat beef for a bit I went this frightening concoction that had chicken as the main protein being enhanced and brought to life by the bacon!
Perks of downtown working definitely include the food. If you visit downtown Nashville be sure to check for food truck locations and hit them up. It’s definitely worth it!
If this had said 3 unhealthy habits I could have just started with a slight bacon obsession. Healthy habits are harder to recognize. So I’m going to share the healthy habits I’m trying to improve.
1. Exercise more regularly. I’m currently taking Krav Maga classes. I shoot for 2 per week. I usually make at least 1 per week. They have added a Saturday morning class and this has been awesome. My fiancé and I do this together so it makes it not only a great workout but some great together time.
No pics from class but this was after a class one night haha!
2. Washing my face and removing my makeup everyday. I have to admit I’m super lazy. At night I’m just ready to chill and then go to bed. So I have purchased this amazing no rinse super simple and great cleanser. I love it. It’s so easy and it works well and my face feels amazing every night and still feels great when I wake up. I highly recommend it.
3. Writing – this is a healthy habit because it provides my soul and my brain with a positive outlet. I can write anything I want and this lets me keep my brain clear. Sometimes you just need to get it out there. Much of my writing is never shared with others but to me it’s a mental health necessity.

Let’s be honest. If you like bacon, bacon never gets boring. It doesn’t need anything to make it better. However, sometimes we like to shake things up. And that is just what we did. My fiancé had a grand idea and well we loved it and now I’m sharing it with you. So for this Try-it Tuesday, it’s something for you to try. Rubbed Bacon!
You want to start off with the bacon that you normally like. We prefer thick cut bacon.
Then you need to select your rub.
As you can see we like rub in this house. And the little baby on the left end is the house blend rub. The recipe is under lock and key! But select a rub that you like and if you enjoy it on porkchops you will like it on bacon. Trust me! Preheat your oven to 400 degrees.
Next I put the bacon out in the pan. I like to cook my bacon in the oven. It’s the least amount of work for the best flavor and there’s no chance of me getting burned with popping grease. So win!
Of course I used our house blend and you can see I’m just sprinkling it all over.
Here is how your bacon will cook. Nicely covered with the rub of your choice. Put the pan in the 400 degree oven for approximately 20-30 minutes. I have a hard time saying exact time because I watch mine closely and when I start to smell it I know it’s getting close. And of course depending on how crispy you like your bacon makes a difference in the time.
The finished bacon smells amazing. You will want to remove from the pan asap and put on a plate with papertowels to soak up the grease. You can make cleanup easier by putting tinfoil in the bottom of the pan. I was lazy this morning and didn’t do that.
Lastly serve with your favorite breakfast treats. Over the long New Year holiday weekend we had breakfast every morning and it was so lovely. I love being able to make a good meal for my family.
