So I live in Nashville and I have since I was a young girl. And one of the things I have never tried is Nashville Hot Chicken. It has started to become a famous thing. I’ve heard there are restaurants all over the country that are coming up with their own recipes and their own versions.
Well as I said I had never tried it and thought that it should be done. Also never tried chicken and waffles. This had to be done as well. So my honey took me to his favorite hot chicken joint.
Pepperfire Hot Chicken in East Nashville. We ordered up our chicken. My honey went with his traditional 3 piece and I did the chicken and waffles.
So let me say this. The hype is real and it’s for a reason. I’ve not been a spicy anything fan ever. But I’m “warming up” to the idea. Haha get it! Anywho I will say this as well. The spicy of the chicken combined with the sweet of the waffle and syrup was the perfect combination and is now probably one of my favorite foods. I wasn’t sure what to expect from this combo but it was great. The spice levels are tricky and I will be honest I got the lightest amount of spice they had, with their actually being spice and well I couldn’t and wouldn’t dare go hotter. But man it was an awesome experience and if you are coming to Nashville or you happen to see it on a menu near you, give it a shot. Really you won’t regret it. Just start with the lightest spicy. Use caution my dears!
So on my girl’s night a while back we finished our shopping fun with an amazing dinner at Virago in downtown Nashville. I love that my hometown is getting so many amazing restaurants and getting quite the reputation for culinary experiences.
I wish I could tell you what this cocktail was but I wanted something fun and non-alcoholic (I was driving) and our wonderful bartender made this for me and it didn’t have a name. But man it was good.
Miso soup is always a hit. And their’s was no joke. Up there with my favorite.
Edamame is one of my favorite treats.

Miso cauliflower. Of everything that I had that night this was literally my favorite. It was misorific!

All in all we had a fabulous evening! The food was really great. The company was even better and who knew cauliflower could be so amazing!

So not being able to eat much lately and just really needing some comfort food it was time for a good old fashioned roast. I wanted a new recipe though because for try-it Tuesday I always like to try something new. So I looked to Pioneer Woman and found her Perfect Pot Roast. Please see her recipe here.
The biggest difference from her roast is that at the 1.5 hour mark (halfway through for my roast) I added potatoes. And they cooked perfectly. The recipe lived up to the hype. The meat was cooked beautifully, the carrots maintained an amazing texture I really enjoyed. I tried my hand at a gravy but it still needs some work! All in all a little home cooking comfort food was what I needed and didn’t make me too horribly sick afterward which was great.

Happy is such a subjective term. I am a very simple woman. I would say there are those in my life including my fiancé and my son who would say that I’m almost child like. I get happy by a sunny day or a snowy day or a rain day when I can wear my rain boots and jump in puddles.

These are just a few of the things that make me happy. Being happy is a choice. It’s not always easy but you can choose it. Go make yourself happy today. That’s my plan!
Chicken and brown rice. Just the sounds of it is boring huh? Well when you are trying to get healthy and eat right and possibly on a cleanse this is the food you have to eat. Along with your fruits and veggies and healthy fats lol! So I had a crazy plan to make three different dishes from one package of chicken! Here’s what happened!
Red beans and rice with chicken instead of sausage. It’s soooo good!
I call this fiesta chicken. Add some salsa on top just before serving and delish! You could of course add cheese and sour cream but not quite as healthy right? Haha! It’s actually very tasty as is I was impressed and the 18 year old liked it too!
Alright so the last one was a seriously last one and I just had to do something different. So I took a can of manwich and added that to the chicken and then added some brown rice when it was all cooked through. It’s like bbq chicken and a good way to use a random can I had in the cabinet. Not the best as far as healthy because there is a lot of sugar in manwich but a new take on a classic dish that was very tasty!

Let’s be honest. If you like bacon, bacon never gets boring. It doesn’t need anything to make it better. However, sometimes we like to shake things up. And that is just what we did. My fiancé had a grand idea and well we loved it and now I’m sharing it with you. So for this Try-it Tuesday, it’s something for you to try. Rubbed Bacon!
You want to start off with the bacon that you normally like. We prefer thick cut bacon.
Then you need to select your rub.
As you can see we like rub in this house. And the little baby on the left end is the house blend rub. The recipe is under lock and key! But select a rub that you like and if you enjoy it on porkchops you will like it on bacon. Trust me! Preheat your oven to 400 degrees.
Next I put the bacon out in the pan. I like to cook my bacon in the oven. It’s the least amount of work for the best flavor and there’s no chance of me getting burned with popping grease. So win!
Of course I used our house blend and you can see I’m just sprinkling it all over.
Here is how your bacon will cook. Nicely covered with the rub of your choice. Put the pan in the 400 degree oven for approximately 20-30 minutes. I have a hard time saying exact time because I watch mine closely and when I start to smell it I know it’s getting close. And of course depending on how crispy you like your bacon makes a difference in the time.
The finished bacon smells amazing. You will want to remove from the pan asap and put on a plate with papertowels to soak up the grease. You can make cleanup easier by putting tinfoil in the bottom of the pan. I was lazy this morning and didn’t do that.
Lastly serve with your favorite breakfast treats. Over the long New Year holiday weekend we had breakfast every morning and it was so lovely. I love being able to make a good meal for my family.
