Thai Inspired Spicy Peanut Chicken and Broccoli


This is my first food post and I just want to be honest with you folks right now. When I cook, I basically review multiple recipes for the thing I want to make and then I make it with a little of this and a little of that, I take from those multiple recipes the things that I like about each and make it my own. I’m going to try really hard and give you all good measurements but just be warned sometimes a pinch of this may be more or less for you. Please remember to taste while you cook and do what you like and what suits your tastes.

So here goes nothing! I used to work at a place that had this amazing lunch delivery service. Every day of the week there was a different restaurant that would deliver. It was a gamble as to what restaurant it might be, but they were all good and reasonably enough priced for ordering lunch in the big city of Nashville. My favorite place was a Thai place (I really wish I could remember the name or figure out exactly where they are), they had the best Chicken Satay with peanut sauce that I had ever had in my life. It was so good. So now as I’m entering this world of better eating and I have resigned myself to the fact that a lot of chicken is in my future, I wanted to figure out how to make spicy peanut sauce and chicken at home. Here is what I came up with and absolutely love!



1.5 pounds chicken (I used boneless, skinless chicken thighs. You could use breasts or even tenders)


1 bag of frozen broccoli

1 tablespoon of Extra Virgin Olive Oil

3-4 tablespoons peanut butter (use the type of your choice. I like the chunky)

Rice vinegar (2 teaspoons)

Balsamic vinegar (1 teaspoon)

Chili Powder (1 teaspoon)

Ground Red Pepper (1 teaspoon/more to taste)/You can also use red pepper flakes, use what’s in the cabinet

Minced Garlic (2 teaspoons)

Dice the chicken into chunks of equal size. Put olive oil in pan, on medium heat – medium/high heat. When the oil is warm, add the chicken and salt and pepper the chicken. Let the chicken go to town and get nice and done. It’s going to sing in that skillet. And remember cook until done, no pink chicken people. I don’t want Gordan Ramsey coming after me. I cooked my chicken for about 20-30 minutes. Next while the chicken is cooking get a small saute pan and add the peanut butter and all remaining ingredients. Cook on low-medium heat continuously stirring until the ingredients are combined and the sauce has the consistency you like for your sauce. If you would like it thicker add more peanut butter. If you would like it thinner you can play with the amounts of the vinegar or even add some soy sauce. When the chicken was fully cooked, I added the broccoli and the sauce to the pan with the chicken, I covered and cooked until the broccoli was done. I chose to put my chicken over pasta but you could also put over rice. Make it your own. I hope you enjoy! I will add nutritional information ASAP. I’m working to find the best app for that.
